Slicing

How you slice potatoes will aff ect both the appearance of the dish and the cooking time. Cut slices the same thickness to cook evenly. To make rounder slices, cut across the width of the potato; for longer slices, cut along the length. If you need to slice cooked potatoes for a recipe, undercook them slightly so they don’t fall to pieces, and chill before handling.

Put the tip of the knife on the work surface or cutting board first, then press the heel of the knife down fi rmly to create nice even slices.
